Rough Draft Atlanta is partnering with Community Farmers Markets to let you know what’s in season at your local market. Each week, we’ll share a list of ingredients that are farm fresh as well as a couple of recipes including those products that you can try at home.
Here’s what we’ve got for you this week: Apples, satsuma oranges, meyer lemons, ginger, turmeric, sweet potatoes, peppers like bell, shishito, aji dulce, padron, and poblano, okra, fairytale eggplants, garlic, winter squash like spaghetti, butternut, pumpkins, greens like bok choy, napa cabbage, kale, and collards, herbs like basil, thyme, rosemary, fennel, flower bouquets with dahlia, zinnia, celosia, marigolds, green onions, pea shoots and microgreens, gourmet mushrooms like oyster and lion’s mane, eggs, honey, shrimp, beef, pork, chicken, duck, sausages, bacon, charcuterie, cheese, raw milk, broths, breads, jams, ferments, fresh juices, pastries and sweet treats including gluten-free options, smoked trout and salmon, raw and flavored pecans, honey, coffee, teas, pickles, cocktail mixers, ghee, cooking oils, vinegars, hot sauce, homemade pasta and sauces, spice blends, pet treats.
Atlanta non-profit Community Farmers Markets (CFM) has been building community through farmers markets since 2011. Operating five weekly outdoor farmers markets and seven farm stands at MARTA stations is one of the strategies by which the organization addresses food access in Atlanta. CFM also offers educational programming in the community, financial incentives to make local food more affordable, and professional development for small businesses. See you at the farmers markets!
Honey Sesame Sweet Potatoes Recipe:
Ingredients:
- 1.5 lbs Sweet Potatoes
- Honey
- ~2 tbsp Olive Oil
- Pinch of Pink Salt
- Pinch of Black Sesame Seeds
Directions:
- Wash your sweet potatoes and cut them into small cubes. Toss them with olive oil and a heavy pinch of salt before adding to your preheated air fryer.
- Preheat by letting it run for at least a minute before adding your sweet potatoes. Air fryers are just small, countertop versions of convection ovens so if you have one of those, that will work fine too.
- For 1.5 lbs you’ll probably have enough sweet potatoes for 2 batches. Set your air fryer for 12 minutes and toss ½ way through cooking.
- Once done, remove and add another sprinkle of salt, a drizzle of honey, and a pinch of black sesame seeds.
Butternut Squash Gratin Recipe:
Ingredients (yields 2-4 servings):
- 1 tbsp unsalted butter
- ½ yellow onion, small diced
- 2 cloves garlic, minced
- 1 tsp fresh thyme, chopped
- 1 small butternut squash, peeled and cut into ½ inch cubes
- ¼ cup olive oil
- salt and freshly ground black pepper
- ½ cup chicken stock
- ½ cup heavy cream
- ¼ cup fresh bread crumbs (for gluten free you can buy a frozen loaf and grind a few slices in a food processor)
- ½ cup grated parmesan cheese
- ½ cup grated gruyere cheese
- 1 tbs fresh parsley, chopped
Directions:
- Preheat the oven to 400.
- Melt the butter in a large skillet over medium-high heat. Add the onion and garlic and cook, stirring, until the onion softens, about 8 minutes. Add the thyme.
- Place the diced squash on a baking sheet, toss with ¼ cup olive oil, salt and pepper, and roast until tender, about 15-20 minutes.
- Once the squash is roasted add to the skillet. Add the chicken stock and heavy cream. Check for seasoning and adjust with salt and pepper.
- Transfer the squash to a casserole dish. Top with the bread crumbs, cheeses and parsley.
- Transfer to the oven and bake until golden brown, about 25 minutes. Let the gratin rest for 10 minutes before serving.
